Baked Artichokes

Ingredients

  • Artichokes

  • Olive oil

  • Salt and pepper

  • Cooking spray

  • Butter

  • Garlic

  • Lemons

  • Chives

  • Fresh Parsley

Instruction​

  • Preheat oven to 400 degrees

  • Cut the stems off each artichoke

  • Cut off the top 1/3 of the artichoke, snipping the pointy piece of each of the lower leaves

  • Cut the artichoke in half from top to bottom

  • Brush the entire artichoke in olive oil

  • Season with salt and pepper

  • Line a baking tray with foil and spray with cooking oil

  • Place artichokes on the tray with openings face up

  • Bake for 30-50 minutes

  • While baking, create a butter sauce by mixing:

    • melted butter

    • minced garlic

    • lemon juice

    • chopped chives

    • chopped fresh parsley
