Roast Any Vegetables

Instruction​

  • This works well with the following vegetables:

    • zucchini angle sliced

    • carrots angle sliced

    • brussel sprouts cut in half

    • asparagus angle sliced

    • sliced bell peppers

    • wedged red onions

    • Thick sliced egg plant

  • Preheat oven to 500 degrees

    • Any lower and you are baking, not roasting

  • Season vegetables with any or all of the following:

    • olive oil

    • red or white wine vinegar

    • salt and pepper

    • paprika

    • thyme

    • rosemary

    • dry parsley

    • lemon or orange slices

  • Cover a low rimmed baking tray in foil and spray with cooking oil

    • If it is high rim, the water will stay inside and steam the vegetables

  • Lay vegetables on the tray as flat as possible

    • You can bake all veggies on the tray at once as long as you cut the faster-cooking vegetables in to larger pieces, such as zucchini

  • Roast for 20-25 minutes
