
Roast Any Vegetables

Instruction​

This works well with the following vegetables:
-
zucchini angle sliced
-
carrots angle sliced
-
brussel sprouts cut in half
-
asparagus angle sliced
-
sliced bell peppers
-
wedged red onions
-
Thick sliced egg plant
-
-
Preheat oven to 500 degrees
-
Any lower and you are baking, not roasting
-
-
Season vegetables with any or all of the following:
-
olive oil
-
red or white wine vinegar
-
salt and pepper
-
paprika
-
thyme
-
rosemary
-
dry parsley
-
lemon or orange slices
-
-
Cover a low rimmed baking tray in foil and spray with cooking oil
-
If it is high rim, the water will stay inside and steam the vegetables
-

Lay vegetables on the tray as flat as possible
-
You can bake all veggies on the tray at once as long as you cut the faster-cooking vegetables in to larger pieces, such as zucchini
-

Roast for 20-25 minutes
