BBQ Rack of Ribs

Ingredients
-
Beef rib rack
-
Olive oil or yellow mustard
-
Salt and pepper
-
Paprika
-
Cayenne pepper
-
BBQ sauce
Instruction
-
Remove ribs from the refrigerator so they can come to room temperature
-
Heat the grill on high for 15 minutes
-
Cut the rack in half
-
Coat the ribs in olive oil or yellow mustard (trust me)
-
Apply a dry rub of:
-
salt and pepper
-
paprika
-
cayenne pepper
-
-
Wrap each half of the rib rack in foil
-
Reduce the BBQ heat to medium-high
-
BBQ lid closed for 25 minutes
-
Flip the racks over and cook an additional 25 minutes
-
Remove the ribs and open the foil
-
You can tell they are cooking properly if the meat is pulling away from the bone
-
-
Return the ribs to the grill without the foil, thick meat side down
-
Apply a light BBQ sauce layer with a brush on the surface
-
Increase the temperature to high and cook 10-15 minutes lid closed
-
Flip the racks, apply a generous amount of BBQ sauce and cook 5-10 more minutes
-
Remove meat to a cutting board to rest, then cut and serve
-
Or just eat them all alone on the couch, which is awesome
