
Breakfast Cups

Ingredients

Corn tortillas

Chopped spinach
-
Spring Onions

Chilies
-
Garlic
-
Tomatoes
-
Cheese of your choosing
-
Eggs
-
Salt and pepper

Garlic powder
-
Chives, Cilantro, or Parsley
Instruction​

Preheat oven to 350 degrees
-
Spray a muffin tin with cooking oil
-
Cut corn tortillas into quarters
-
Lay two tortilla pieces in each cup of a muffin tray forming a cup
-
Fill cups with vegetables such as:
-
chopped spinach
-
spring onions
-
chilies
-
garlic
-
tomatoes
-
-
Sprinkle cheese onto vegetables
-
Add breakfast meat of your choosing
-
In a large bowl, beat together;
-
one egg for every muffin cup
-
salt and pepper
-
garlic powder
-

Pour mixture into the muffin cups
-
Sprinkle more cheese on top
-
Spray a large piece of tin foil with oil and cover the muffin tray
-
Bake for 10-20 minutes

Garnish with chives, cilantro, or parsley
