Ingredients

  • Corn tortillas

  • Chopped spinach

  • Spring Onions

  • Chilies

  • Garlic

  • Tomatoes

  • Cheese of your choosing

  • Eggs

  • Salt and pepper

  • Garlic powder

  • Chives, Cilantro, or Parsley

Instruction​

  • Preheat oven to 350 degrees

  • Spray a muffin tin with cooking oil

  • Cut corn tortillas into quarters

  • Lay two tortilla pieces in each cup of a muffin tray forming a cup

  • Fill cups with vegetables such as:

    • chopped spinach

    • spring onions

    • chilies

    • garlic

    • tomatoes

  • Sprinkle cheese onto vegetables

  • Add breakfast meat of your choosing

  • In a large bowl, beat together;

    • one egg for every muffin cup

    • salt and pepper

    • garlic powder

  • Pour mixture into the muffin cups

  • Sprinkle more cheese on top

  • Spray a large piece of tin foil with oil and cover the muffin tray

  • Bake for 10-20 minutes

  • Garnish with chives, cilantro, or parsley
