Caramelized Onions

Ingredients

  • Yellow onion​

  • Chili flakes

  • Garlic

  • Butter

  • Salt and pepper

  • Sugar

  • Soy sauce

  • Lemon

Instruction​

  • In a cold pan, add olive oil and turn heat onto medium-high

  • Infuse the oil with:

    • chili flakes

    • garlic

    • a knob of butter

  • Slice a yellow onion into strips​

    • While yellow onions are very pungent when raw, they get very sweet when cooked.

    • Sweet onions sound like they will caramelize better, but that is incorrect​ and you'll end up with goop.

  • Saute the onion, seasoning with:

    • salt and pepper

    • a pinch of sugar

    • a splash of soy sauce

    • fresh lemon juice

  • After onions are translucent, you can toss in spinach to soak up the extra sauce

Serve with burgers, chicken, brats, salmon
