Butternut Squash

Ingredients

  • 3 chicken breasts

  • Olive oil

  • Butternut squash

  • Mushrooms

  • Yellow onion

  • Salt and pepper

  • Harissa paste

  • Oregano

  • Corriander

  • Chicken stock

Instruction​

  • In a large pot, bring water to a boil and salt water until it it resembles the sea

  • Boil 2 large or 3 small chicken breasts, then remove, cool, and shred

  • Empty the pot water and add back onto the heat

  • Add olive oil and saute:

    • chopped butternut squash

    • sliced mushrooms

    • yellow onion

  • Spice with:

    • Salt and pepper

    • Heaps of Harissa Paste

    • Oregano

    • Ground coriander

  • Add 4 cups of chicken stock

  • Bring to a boil, then re-add shredded chicken and stir well

  • Simmer for 6-8 minutes

  • Mix in fresh chopped coriander with stalks, saving some leaves for garnish

  • Serve and compliment
