Chicken
Butternut Squash

Ingredients

3 chicken breasts

Olive oil
-
Butternut squash
-
Mushrooms
-
Yellow onion
-
Salt and pepper
-
Harissa paste
-
Oregano
-
Corriander
-
Chicken stock
Instruction​
-
In a large pot, bring water to a boil and salt water until it it resembles the sea
-
Boil 2 large or 3 small chicken breasts, then remove, cool, and shred
-
Empty the pot water and add back onto the heat
-
Add olive oil and saute:
-
chopped butternut squash
-
sliced mushrooms
-
yellow onion
-
-
Spice with:
-
Salt and pepper
-
Heaps of Harissa Paste
-
Oregano
-
Ground coriander
-
-
Add 4 cups of chicken stock
-
Bring to a boil, then re-add shredded chicken and stir well
-
Simmer for 6-8 minutes
-
Mix in fresh chopped coriander with stalks, saving some leaves for garnish
-
Serve and compliment
