Chicken Bites

Ingredients

  • Chicken breasts

  • Salt and pepper

  • Fresh bay leaves

  • Panchetta or bacon

  • Olive oil

Instruction​

  • Slice each chicken breasts into thick slices

  • Season each slice with salt and pepper

  • Place a fresh bay leaf on each slice of chicken and wrap a strip of panchetta or bacon around it to secure them together

  • Stick a toothpick through the bite to keep the panchetta secure

    • The toothpick should be stuck through the thin edge of the slice so the wide sides can make full contact with the pan​

  • Add olive oil to a pan on medium heat

  • Cook each chicken bite until the center is 165 degrees

  • Drain on a paper towel covered plate

  • Make sure to remove the toothpicks so your guests don't accidentally eat them like that time I made these for my sister
