Spicy Tomato Chickpeas

& Chicken

Ingredients

  • Chicken breasts

  • Salt and pepper

  • Garlic powder

  • Tomato

  • Pesto sauce

  • Buffalo mozzarella

  • Balsamic vinegar reduction

  • Basil

Instruction​

  • Preheat oven to 375 degrees

  • Slice slits halfway through each chicken breast in a hassle-back pattern, each 1/2 inch apart

  • Season each breast (making sure to get in the slits) with:

    • salt

    • pepper

    • garlic powder

  • Slice a tomato thickly and stick one slice into every other slit

  • Line a baking sheet with foil and spray with cooking oil

  • Add the chicken to the pan and spoon pesto over the top of each slice of chicken

  • Bake for 25-30 minutes until the internal temperature of the chicken is 150 degrees

  • Stick buffalo mozzarella slices into the chicken slits between each tomato

  • Bake until the cheese melts

  • Plate the chicken and drizzle a balsamic vinegar reduction over each breast and garnish with fresh basil
