
Spicy Tomato Chickpeas
& Chicken

Ingredients

Chicken breasts
-
Salt and pepper
-
Garlic powder
-
Tomato
-
Pesto sauce
-
Buffalo mozzarella
-
Balsamic vinegar reduction
-
Basil
Instruction​
-
Preheat oven to 375 degrees
-
Slice slits halfway through each chicken breast in a hassle-back pattern, each 1/2 inch apart

Season each breast (making sure to get in the slits) with:
-
salt
-
pepper
-
garlic powder
-
-
Slice a tomato thickly and stick one slice into every other slit

Line a baking sheet with foil and spray with cooking oil
-
Add the chicken to the pan and spoon pesto over the top of each slice of chicken

Bake for 25-30 minutes until the internal temperature of the chicken is 150 degrees

Stick buffalo mozzarella slices into the chicken slits between each tomato
-
Bake until the cheese melts

Plate the chicken and drizzle a balsamic vinegar reduction over each breast and garnish with fresh basil
