Crusted Rack of Lamb

Ingredients

  • Rack of lamb

  • Salt and pepper

  • Rosemary

  • Thyme

  • Olive oil

  • Butter

  • Panko crumbs

  • Parsley

  • Garlic

  • Dijon

Instruction​

  • Season the rack of lamb with:

    • salt and pepper

    • rosemary

    • thyme

  • Heat a pan on medium-high and add olive oil and a nob of butter

  • Sear the lamb on each side, basting with the juices, then set aside to rest

    • This can be done well before the meal and kept in the refrigerator

  • Preheat the oven to 400 degrees

  • In a mixing bowl, combine:

    • panko crumbs

    • fresh parsley

    • minced garlic

    • rosemary

    • thyme

    • grated Parmesan cheese

  • Coat the lamb rack in Dijon mustard, then apply the crumb crust

  • Bake for 20-25 minutes until the internal temperature is 120 minutes

  • Let the meat rest allowing the internal temperature to reach 125-130 degrees
