Crusted Rack of Lamb

Ingredients

Rack of lamb

Salt and pepper
-
Rosemary
-
Thyme
-
Olive oil
-
Butter
-
Panko crumbs
-
Parsley
-
Garlic
-
Dijon
Instruction​
-
Season the rack of lamb with:
-
salt and pepper
-
rosemary
-
thyme
-
-
Heat a pan on medium-high and add olive oil and a nob of butter
-
Sear the lamb on each side, basting with the juices, then set aside to rest
-
This can be done well before the meal and kept in the refrigerator
-

Preheat the oven to 400 degrees

In a mixing bowl, combine:

panko crumbs
-
fresh parsley
-
minced garlic
-
rosemary
-
thyme
-
grated Parmesan cheese
-
-
Coat the lamb rack in Dijon mustard, then apply the crumb crust
-
Bake for 20-25 minutes until the internal temperature is 120 minutes
-
Let the meat rest allowing the internal temperature to reach 125-130 degrees
