
Harissa Chicken Tray Bake

Ingredients

Bell peppers

Red onions

Whole garlic cloves

Cooking spray

Olive oil

Salt and pepper

Red wine vinegar

Harissa paste
-
Honey
-
Fresh mint
Instruction​

Preheat oven to 350 degrees
-
Chop the bell peppers and red onions into large chunks and peel several cloves of garlic, leaving them whole
-
Spray a deep baking tray with cooking oil and add your vegetables
-
In a bowl, mix together the following:

olive oil
-
salt and pepper
-
red wine vinegar
-
4 heaping spoons of Harissa paste
-
A blob of honey
-

Pour this mixture onto your vegetables and mix everything together with your hands

Add chicken to the dish and rub on the Harissa mixture
-
You can use any cuts of chicken you like, but bone-in, skin-on drumsticks or thighs are best​

Roast for 50 minutes until chicken is 160 degrees internally, then let it rest until it comes up to 165
-
Garnish with fresh mint
