Ingredients

  • Bell peppers

  • Red onions

  • Whole garlic cloves

  • Cooking spray

  • Olive oil

  • Salt and pepper

  • Red wine vinegar

  • Harissa paste

  • Honey

  • Fresh mint

Instruction​

  • Preheat oven to 350 degrees

  • Chop the bell peppers and red onions into large chunks and peel several cloves of garlic, leaving them whole

  • Spray a deep baking tray with cooking oil and add your vegetables

  • In a bowl, mix together the following:

    • olive oil

    • salt and pepper

    • red wine vinegar

    • 4 heaping spoons of Harissa paste

    • A blob of honey

  • Pour this mixture onto your vegetables and mix everything together with your hands

  • Add chicken to the dish and rub on the Harissa mixture

    • You can use any cuts of chicken you like, but bone-in, skin-on drumsticks or thighs are best​

  • Roast for 50 minutes until chicken is 160 degrees internally, then let it rest until it comes up to 165

  • Garnish with fresh mint
