
Meatloaf

Ingredients

Olive oil

White onion
-
Zucchini
-
Garlic
-
Salt and pepper
-
Oregano
-
Basil
-
Stale bread
-
Milk
-
1-2 eggs
-
Parsley
-
Worcestershire
-
1/2 pound ground beef
-
1/2 pound ground pork
-
Cooking spray
-
Ketchup
-
Tomato Paste
-
Paprika
-
Garlic powder
-
Brown sugar
-
Red wine vinegar
Instruction​

On medium-high heat, add olive oil to a pan and saute:

chopped white onions with salt to sweat
-
shredded zucchini
-
chopped garlic
-
-
Season with:
-
oregano
-
basil
-
-
Remove pan from heat to cool
-
Preheat oven to 350 degrees

In a large bowl, shred stale bread and let it soak in milk
-
Mash bread with a spatula, then add:
-
1-2 eggs
-
fresh parsley
-
grated Parmesan cheese
-
a dash of Worcestershire sauce
-
salt and pepper
-

Add the sauted vegetables and mix well before adding the meat

Fold in ground pork and ground beef
-
Add foil to a deep baking pan and spray with cooking oil

Shape meat mixture into a loaf on the baking pan

In a small bowl, make the glaze:

ketchup
-
tomato paste
-
paprika
-
garlic powder
-
brown sugar
-
red wine vinegar
-

Pour half of the glaze onto the meat loaf and bake for 50 minutes
-
Add the rest of the glaze, then bake an additional 20 minutes until the internal temperature is 160 degrees
