Minestrone

Ingredients

Small pasta
-
Olive oil
-
Salt and pepper
-
Mirepoix: white onion, celery, carrots
-
Zucchini
-
Tomatoes (canned is best)
-
Garlic cloves
-
1/2 pound ground beef
-
2 liters of vegetable stock
-
Parsley
-
Basil
-
Oregano
-
Thyme
-
Parmesan
Instruction​
-
In a large non-stick pot, boil salted water and cook pasta el dente
-
Strain pasta, set aside, and empty the pot
-
In the pot, add olive oil and saute the following with salt and pepper:

Mirepoix (white onion, celery, carrots)
-
Zucchini
-
Tomatoes
-
Garlic cloves
-

Add ground beef and saute until mostly cooked
-
Add 2 liters of vegetable stock
-
Add 1 can of kidney beans
-
Season with
-
salt and pepper
-
Parsley
-
Basil
-
Oregano
-
Thyme
-
-
Simmer for 20 minutes
-
Stir in el dente pasta
-
Serve and top with shaved parmesan
