Ingredients

  • Small pasta

  • Olive oil

  • Salt and pepper

  • Mirepoix: white onion, celery, carrots

  • Zucchini

  • Tomatoes (canned is best)

  • Garlic cloves

  • 1/2 pound ground beef

  • 2 liters of vegetable stock

  • Parsley

  • Basil

  • Oregano

  • Thyme

  • Parmesan

Instruction​

  • In a large non-stick pot, boil salted water and cook pasta el dente

  • Strain pasta, set aside, and empty the pot

  • In the pot, add olive oil and saute the following with salt and pepper:

    • Mirepoix (white onion, celery, carrots)

    • Zucchini

    • Tomatoes

    • Garlic cloves

  • Add ground beef and saute until mostly cooked

  • Add 2 liters of vegetable stock

  • Add 1 can of kidney  beans

  • Season with

    • salt and pepper

    • Parsley

    • Basil

    • Oregano

    • Thyme

  • Simmer for 20 minutes

  • Stir in el dente pasta

  • Serve and top with shaved parmesan
