Minted Pea Quinoa

Ingredients

2 cups water
-
1 cup quinoa
-
1 lemon
-
Fresh mint
-
1 cup frozen peas
-
Olive oil
-
Salt and pepper
Instruction​

Add 2 cups of water to a pot and bring to a boil
-
Pluck the leaves from a mint bunch, roll and slice into strips, then set aside (Save some small leaves whole for garnish later
-
When the water comes to a boil, season with a generous pinch of sea salt and pepper
-
Add a cup of frozen peas to the water
-
Add 1 cup of quinoa to the water
-
Add the chopped mint and stir
-
Reduce heat to low and cover
-
Let this simmer for 10-12 minutes until all water is absorbed

Use a fork to fluff
-
Add to a serving plate, drizzle with quality olive oil, squeeze lemon juice over the top, and add final touches of salt and pepper

Garnish with fresh mint leaves
