Minted Pea Quinoa

Ingredients

  • 2 cups water

  • 1 cup quinoa

  • 1 lemon

  • Fresh mint

  • 1 cup frozen peas

  • Olive oil

  • Salt and pepper

Instruction​

  • Add 2 cups of water to a pot and bring to a boil

  • Pluck the leaves from a mint bunch, roll and slice into strips, then set aside (Save some small leaves whole for garnish later

  • When the water comes to a boil, season with a generous pinch of sea salt and pepper

  • Add a cup of frozen peas to the water

  • Add 1 cup of quinoa to the water

  • Add the chopped mint and stir

  • Reduce heat to low and cover

  • Let this simmer for 10-12 minutes until all water is absorbed

  • Use a fork to fluff

  • Add to a serving plate, drizzle with quality olive oil, squeeze lemon juice over the top, and add final touches of salt and pepper

  • Garnish with fresh mint leaves
