Parmesan Mushroom Green Beans

Ingredients

  • Green Beans

  • Mushrooms of your choice

  • 1 cup shredded Parmesan cheese

  • Olive Oil (about 3 tbs drizzled)

  • Sea salt

  • Pepper

  • Red Chili Flakes (optional)

  • 1 handful of pine nuts (about 1/2 to 1 cup)

Prep:

  • Preheat the oven to 350 degrees

  • Line a baking tray with foil and spray with cooking spray

  • Wash and cut the tips off of your green beans

  • Use a pestle and mortar to crush your pine nuts into a crumble (You can also leave these whole if you like)

  • Shred your Parmesan cheese

Bake:

  • Spread your green beans evenly across the baking sheet

  • Drizzle with olive oil

  • Season with salt and pepper to taste

    • Keep in mind that the parmesan will be salty too​​​​

  • Sprinkle red chili flakes

  • Use your hands to toss the beans until evenly coated, then spread them evenly across the sheet again

  • Bake for 15 minutes

  • Remove from the oven and sprinkle your chopped mushrooms and pine nut crumble

  • Top with parmesan

  • Return to the oven for 5-8 minutes until the cheese is melted and the mushrooms softened
