Parmesan Mushrooms

Ingredients

  • Whole mushrooms

  • Garlic

  • White onion

  • Knob of butter

  • Salt and pepper

  • Chili flakes

  • Thyme

  • Splash of stock

  • Splash of cream

  • Fresh parsley

  • Parmesan

Instruction​

  • In a cold pan, cook thick cube-cut panchetta or bacon and render the fat

  • Once the pan is hot, add:

    • whole mushrooms

    • garlic

    • chopped white onion

    • a knob of butter

  • Season with:

    • salt and pepper

    • chili flakes

    • thyme

  • Do not stir the mushrooms for the first 1-2 minutes to caramelize

  • Once sauteed, add:

    • a splash of water or stock

    • a splash of cream

    • fresh chopped parsley (save some for garnish)

    • a hefty amount of grated Parmesan

  • Cover until melted

  • Plate and garnish with parsley
