Parmesan Mushrooms

Ingredients

Whole mushrooms
-
Garlic
-
White onion
-
Knob of butter
-
Salt and pepper
-
Chili flakes
-
Thyme
-
Splash of stock
-
Splash of cream
-
Fresh parsley
-
Parmesan
Instruction​
-
In a cold pan, cook thick cube-cut panchetta or bacon and render the fat
-
Once the pan is hot, add:
-
whole mushrooms
-
garlic
-
chopped white onion
-
a knob of butter
-
-
Season with:
-
salt and pepper
-
chili flakes
-
thyme
-
-
Do not stir the mushrooms for the first 1-2 minutes to caramelize
-
Once sauteed, add:
-
a splash of water or stock
-
a splash of cream
-
fresh chopped parsley (save some for garnish)
-
a hefty amount of grated Parmesan
-
-
Cover until melted
-
Plate and garnish with parsley
