
Perfect Omelette

Ingredients

3 eggs

A splash of milk

Salt & pepper

Garlic powder

Olive oil

White onion
-
Breakfast sausage

Minced garlic
-
Mushrooms
-
Chili flakes
-
Spinach
-
Gouda cheese
-
1 avocado
Instruction​

In a mixing bowl, whisk together:
-
3 large eggs
-
a splash of milk
-
salt and pepper
-
garlic powder
-
-
Heat a pan on medium-high heat and add olive oil
-
Saute the following:
-
white onions
-
breakfast sausage
-
minced garlic
-
mushrooms
-
season with salt, pepper, and chili flakes
-

Once cooked down, toss in fresh spinach
-
Once wilted, remove everything from the pan and set aside
-
Reduce heat to low and spray the pan with cooking oil
-
Pour in egg mixture and tap the pan against the griddle to create an even layer and remove bubbles
-
Use a rubber spatula to mold the edges into a tighter circle
-
Cover with a lid for 2-3 minutes
Egg should be cooked on the outside, but still wet inside
-
Remove lid and add the sausage and vegetable mixture to one half of the omelette
-
Add shredded Gouda cheese
-
Tilt the pan at an angle and use the spatula to fold it in half
-
Turn off the heat and put the lid back on for another minute to melt the cheese
-
Plate the omelette and top with sliced avocado
