Rocket Tagliata

Ingredients

  • Pine nuts

  • Rump steak

  • Salt and pepper

  • Pesto sauce

  • Rocket

  • Olive oil

  • Parmesan

Instruction​

  • On a high heat pan, toast pine nuts, then set aside

  • Cut the fat strip off of a quality rump steak

  • Chop the fat into small strips and fry in the pan to render the fat

  • Season steaks with salt and pepper

  • Cover steaks with grease paper and pound flat

  • Scoop out the now crispy fat bits and set aside

  • Sear the steaks for one minute on each side

  • Remove steaks to rest

  • Spread pesto onto a sharing platter

  • Thinly slice the steaks and plate them on the pesto

  • Top the platter with rocket, pine nuts, and (optionally) crispy fat bits

  • Mix olive oil into the steaks' resting juices and drizzle onto the rocket

  • Shave Parmesan onto the dish
