
Rocket Tagliata

Ingredients

Pine nuts
-
Rump steak
-
Salt and pepper
-
Pesto sauce
-
Rocket
-
Olive oil
-
Parmesan
Instruction​
-
On a high heat pan, toast pine nuts, then set aside
-
Cut the fat strip off of a quality rump steak
-
Chop the fat into small strips and fry in the pan to render the fat
-
Season steaks with salt and pepper
-
Cover steaks with grease paper and pound flat
-
Scoop out the now crispy fat bits and set aside
-
Sear the steaks for one minute on each side
-
Remove steaks to rest
-
Spread pesto onto a sharing platter
-

Thinly slice the steaks and plate them on the pesto

Top the platter with rocket, pine nuts, and (optionally) crispy fat bits
-
Mix olive oil into the steaks' resting juices and drizzle onto the rocket
-
Shave Parmesan onto the dish
