Seared Scallops

Ingredients

Scallops
-
Olive oil
-
White wine (of quality you would drink)
-
Garlic
-
Parsley
-
Lemon
-
Chives
-
Salt and pepper
Instruction​
-
Season scallops with salt and pepper
-
Add olive oil to a pan on high heat
-
Sear scallops for 1-3 minutes on the first side
-
Flip and sear scallops for 1-2 minutes on the second side
-
Drain scallops on a paper towel and keep warm
-
In the still hot scallop pan, 1/2 cup of white wine to deglaze the pan
-
Season with:
-
garlic
-
parsley
-
lemon juice and zest
-
chives
-
salt and pepper
-
-
Turn off the heat and finish the sauce with softened butter
-
Stir like crazy to make the sauce velvety
-
Serve the sauce over the scallops obviously
