Seared Scallops

Ingredients

  • Scallops

  • Olive oil

  • White wine (of quality you would drink)

  • Garlic

  • Parsley

  • Lemon

  • Chives

  • Salt and pepper

Instruction​

  • Season scallops with salt and pepper

  • Add olive oil to a pan on high heat

  • Sear scallops for 1-3 minutes on the first side

  • Flip and sear scallops for 1-2 minutes on the second side

  • Drain scallops on a paper towel and keep warm

  • In the still hot scallop pan, 1/2 cup of white wine to deglaze the pan

  • Season with:

    • garlic

    • parsley

    • lemon juice and zest

    • chives

    • salt and pepper

  • Turn off the heat and finish the sauce with softened butter

  • Stir like crazy to make the sauce velvety

  • Serve the sauce over the scallops obviously
