Spanish Quinoa or Rice

Ingredients

Olive oil

Yellow or red onion

Bell pepper
-
Garlic
-
Chili peppers (typically Serrano)

Salt and pepper
-
Chili flakes
-
Oregano
-
Quinoa or rice
-
Crushed tomatoes
-
Kidney beans
-
Vegetable or chicken broth
-
Paprika
-
Chili powder
-
Cayenne pepper
Instruction​
-
Heat a large pan on high heat
-
Add olive oil and saute:
-
chopped onions
-
chopped bell peppers
-
chopped garlic
-
chopped chili peppers
-
-
Season with:
-
salt and pepper
-
chili flakes
-
oregano
-
-
Once softened, add one cup of quinoa or rice, and brown until it gives off a nutty aroma
-
Add crushed canned tomatoes and canned black kidney beans
-
Add 2 cups of vegetable or chicken broth
-
Season with:
-
Paprika
-
chili powder
-
cayenne pepper
-
-
Bring to a boil, then reduce heat to low and cover for 20 minutes
-
Turn off heat and let rest to thicken
