Spanish Quinoa or Rice

Ingredients

  • Olive oil

  • Yellow or red onion

  • Bell pepper

  • Garlic

  • Chili peppers (typically Serrano)

  • Salt and pepper

  • Chili flakes

  • Oregano

  • Quinoa or rice

  • Crushed tomatoes

  • Kidney beans

  • Vegetable or chicken broth

  • Paprika

  • Chili powder

  • Cayenne pepper

Instruction​

  • Heat a large pan on high heat

  • Add olive oil and saute:

    • chopped onions

    • chopped bell peppers

    • chopped garlic

    • chopped chili peppers

  • Season with:

    • salt and pepper

    • chili flakes

    • oregano

  • Once softened, add one cup of quinoa or rice, and brown until it gives off a nutty aroma

  • Add crushed canned tomatoes and canned black kidney beans

  • Add 2 cups of vegetable or chicken broth

  • Season with:

    • Paprika

    • chili powder

    • cayenne pepper

  • Bring to a boil, then reduce heat to low and cover for 20 minutes

  • Turn off heat and let rest to thicken
