Ingredients

  • Pork chops

  • Spinach

  • Buffalo mozzarella

  • Garlic

  • Dijon

  • Salt and pepper

  • Thyme

  • Rosemary

  • Parsley

Instruction​

  • Preheat oven to 400 degrees

  • Cut a slit into the non-fat side of each pork chop

  • Stuff each chop with:

    • Spinach

    • A hunk of buffalo mozzarella

    • Peeled and halved garlic cloves

  • Coat chops in olive oil and rub on:

    • Dijon mustard

    • Salt and pepper

    • Thyme

    • Rosemary

  • In an iron skillet on medium-high heat, sear both sides of each pork chop, then use tongs to hold the chops on their sides to sear the fat

  • Wrap foil over the skillet and transfer it to the oven

  • Bake for 20-30 minutes until the internal temperature of the pork is 150 degrees

  • Top each chop with a smear of dijon, and slice of mozarella, and a garnish of parsley

  • Return to the oven until the cheese is softened
