Tofu Nuggets

(or Zucchini Nuggets)

Tofu Nuggets

Ingredients

  • Firm tofu (or zucchini)

  • Cooking spray

  • Four

  • Salt and pepper

  • Paprika

  • Garlic powder

  • Panko crumbs or corn flakes

  • Parmesan

  • 2 eggs

Instruction​

  • Preheat oven to 425 degrees

  • Drain tofu onto a tea towel for 30 minutes

  • Cut tofu into tots

  • Cover a baking tray in foil and spray with cooking oil

  • Season a plate of flour with:

    • salt and pepper

    • paprika

    • garlic powder

  • Whisk 2 eggs into a bowl and season with:

    • salt and pepper

    • paprika

    • garlic powder

  • In a mixing bowl, combine:

    • Panko crumbs or crushed corn flakes

    • grated parmesan cheese

    • salt and pepper

  • Dredge each tot in the flour mixture

  • Dip each floured tot into the egg mixture

  • Coat each tot with the crumbs

  • Place each tot onto the baking tray

  • Spray the tots with cooking oil to ensure they turn golden brown

  • Bake for 25 minutes, turning once

This dish can be made with zucchini instead of Tofu to create Crusted Zucchini Strips - also delicious!

Both versions are best consumed while drunk.
