
Tofu Nuggets
(or Zucchini Nuggets)

Ingredients

Firm tofu (or zucchini)
-
Cooking spray
-
Four
-
Salt and pepper
-
Paprika
-
Garlic powder
-
Panko crumbs or corn flakes
-
Parmesan
-
2 eggs
Instruction​
-
Preheat oven to 425 degrees
-
Drain tofu onto a tea towel for 30 minutes
-
Cut tofu into tots
-
Cover a baking tray in foil and spray with cooking oil
-
Season a plate of flour with:

salt and pepper
-
paprika
-
garlic powder
-
-
Whisk 2 eggs into a bowl and season with:

salt and pepper
-
paprika
-
garlic powder
-
-
In a mixing bowl, combine:

Panko crumbs or crushed corn flakes
-
grated parmesan cheese
-
salt and pepper
-
-
Dredge each tot in the flour mixture
-
Dip each floured tot into the egg mixture
-
Coat each tot with the crumbs
-
Place each tot onto the baking tray
-
Spray the tots with cooking oil to ensure they turn golden brown
-
Bake for 25 minutes, turning once

This dish can be made with zucchini instead of Tofu to create Crusted Zucchini Strips - also delicious!

Both versions are best consumed while drunk.
