Veloute Sauce

Ingredients

  • Olive oil

  • Shallots

  • Garlic

  • 1/2 cup white wine

  • 1/2 cup chicken stock

  • Salt and pepper

  • Lemon

Instruction​

  • Heat a pan on medium-high heat

  • Add olive oil and saute:

    • finely chopped shallots

    • garlic

  • Add 1/2 cup of white wine and 1/2 cup of chicken stock

  • Simmer until reduced by 1/2

  • Season with:

    • Salt and pepper

    • Lemon zest and juice

This is a French Mother Sauce

It is a base, from which you can customize in many ways to fit your dishes by adding other herbs, spices, vegetables, etc.
