Veloute Sauce

Ingredients

Olive oil

Shallots
-
Garlic
-
1/2 cup white wine
-
1/2 cup chicken stock
-
Salt and pepper
-
Lemon
Instruction​

Heat a pan on medium-high heat

Add olive oil and saute:
-
finely chopped shallots
-
garlic
-
-
Add 1/2 cup of white wine and 1/2 cup of chicken stock
-
Simmer until reduced by 1/2
-
Season with:
-
Salt and pepper
-
Lemon zest and juice
-

This is a French Mother Sauce
It is a base, from which you can customize in many ways to fit your dishes by adding other herbs, spices, vegetables, etc.
