Vinaigrette

Make sure to be generous with the salt and the acid component because the dressing will thin out quite a bit when added to the water-filled greens

Instruction​

Lemon Vinaigrette:

  • In a glass jar, pour in:

    • 2 parts olive oil

    • 1 part lemon juice

    • A hefty dollop of Dijon mustard

    • Optionally, you can add a splash of white wine vinegar

  • Season with

    • Salt

    • pepper

    • minced garlic

    • Oregano and/or basil

    • fresh chopped parsley

  • Close and shake the jar to mix well

  • Be sure to taste and adjust seasonings appropriately

Red Wine Vinaigrette:

  • In a glass jar, pour in:

    • 2 parts olive oil

    • 1 part red wine vinegar

    • A hefty dollop of Dijon mustard

    • A couple of splashes of balsamic vinegar

  • Season with

    • Salt

    • pepper

    • Oregano

  • You can add honey if you want to sweeten it

  • Close and shake the jar to mix well

  • Be sure to taste and adjust seasonings appropriately
