
Chickpea Salad

Instruction​​
-
Chop the following into small chunks:
-
Cucumber
-
Tomato (discarding the goopy center)
-
Red onion
-
Dill
-
Avocado
-
Mozzarella cheese
-

Drain your canned chickpeas and pour into a large bowl
-
Add your cucumber, tomato, red onion, mozzarella, red chili flakes, and dry oregano to the bowl
-
Stir to evenly incorporate
-
In a separate bowl or jar, mix your Lemon Vinaigrette:

​Drizzle your dressing over the salad, then add your fresh dill and avocado chunks
-
Mix this together very gently to not break up the avocado

Alternative Dressing/Seasonings:​​

Cumin​ and cayenne pepper
-
Curry Seasoning
-
Harissa seasoning or paste (my personal favorite)
-
Plop of honey
-
Sriracha
