Chickpea Salad

Instruction​​

  • Chop the following into small chunks:

    • Cucumber

    • Tomato (discarding the goopy center)

    • Red onion

    • Dill 

    • Avocado

    • Mozzarella cheese

  • Drain your canned chickpeas and pour into a large bowl

  • Add your cucumber, tomato, red onion, mozzarella, red chili flakes, and dry oregano to the bowl

  • Stir to evenly incorporate

  • In a separate bowl or jar, mix your Lemon Vinaigrette:

  • ​Drizzle your dressing over the salad, then add your fresh dill and avocado chunks

  • Mix this together very gently to not break up the avocado

Alternative Dressing/Seasonings:​​

  • Cumin​ and cayenne pepper

  • Curry Seasoning

  • Harissa seasoning or paste (my personal favorite)

  • Plop of honey

  • Sriracha

  • Mozzarella cheese

  • 1 Cucumber

  • 1-2 Tomatoes

  • 1/2 to 1 Red Onion

  • 1 Avocado

  • 1 16 oz can of chickpeas

  • Fresh Dill or Parsley

  • Dry oregano

  • Red chili flakes

  • Lemon vinaigrette
