Enchiladas

Ingredients

Shredded pork carnitas
-
Enchilada sauce
-
Corn or flour tortillas
-
Mexican cheese mixture
-
Black olives
-
Jalapenos
-
Green onions
-
Avocado
-
Cilantro
-
Lime
Instruction
-
Prepare Shredded Pork Carnitas, the recipe for which is available at the button below

Preheat the oven to 375 degrees
-
In a baking pan, spread enchilada sauce on the bottom of the dish
-
Mix enchilada sauce into the shredded pork
-
In corn or flour tortillas, add:
-
Sauced pork
-
Mexican cheese
-
Black olives
-
Jalapenos
-
-
Roll together and place each rolled tortilla into the pan seam side down
-
Top with more sauce and generously sprinkle on more cheese
-
Bake for 20-25 minutes
-
Let cool for 10 minutes, then serve

Top enchiladas with:
-
chopped green onions
-
avocado
-
fresh cilantro
-
lime
-
