Enchiladas

Ingredients

  • Shredded pork carnitas

  • Enchilada sauce

  • Corn or flour tortillas

  • Mexican cheese mixture

  • Black olives

  • Jalapenos

  • Green onions

  • Avocado

  • Cilantro

  • Lime

Instruction

  • Prepare Shredded Pork Carnitas, the recipe for which is available at the button below

  • Preheat the oven to 375 degrees

  • In a baking pan, spread enchilada sauce on the bottom of the dish

  • Mix enchilada sauce into the shredded pork

  • In corn or flour tortillas, add:

    • Sauced pork

    • Mexican cheese

    • Black olives

    • Jalapenos

  • Roll together and place each rolled tortilla into the pan seam side down

  • Top with more sauce and generously sprinkle on more cheese

  • Bake for 20-25 minutes

  • Let cool for 10 minutes, then serve

  • Top enchiladas with:

    • chopped green onions

    • avocado

    • fresh cilantro

    • lime
