
Shredded Pork Carnitas

Ingredients

Pork shoulder
-
Garlic
-
Orange
-
Salt and pepper
-
Cumin
-
Chili powder
-
Cilantro
Instruction​
-
In a small bowl, mix together:
-
the juice of 1 orange
-
diced garlic
-
oregano
-
cumin
-
chili powder​
-
-
Season your pork shoulder with salt and pepper

Add vegetable oil to a heavy pan or dutch oven and saute the roast until it is browned on all sides

Transfer the roast to a plate, then remove the fat from your pan - but leave the sticky bits behind!

Add the pork back to the pan and turn the heat down as low as it will go

Cook covered with a lid for 3 1/2 hours, then remove the lid and cook an extra half hour
-
Remove from the heat and let it cool for a bit
-
Use forks or your hands to shred the meat, discarding any large pieces of fat.

Put the pan back onto heat at medium-high and saute your shredded carnitas until they develop crispy edges
-
Garnish with fresh cilantro
