Shredded Pork Carnitas

Ingredients

  • Pork shoulder

  • Garlic

  • Orange

  • Salt and pepper

  • Cumin

  • Chili powder

  • Cilantro

Instruction​

  • In a small bowl, mix together:

    • the juice of 1 orange

    • diced garlic

    • oregano

    • cumin

    • chili powder​

  • Season your pork shoulder with salt and pepper

  • Add vegetable oil to a heavy pan or dutch oven and saute the roast until it is browned on all sides

  • Transfer the roast to a plate, then remove the fat from your pan - but leave the sticky bits behind!

  • Add the pork back to the pan and turn the heat down as low as it will go

  • Cook covered with a lid for 3 1/2 hours, then remove the lid and cook an extra half hour

  • Remove from the heat and let it cool for a bit

  • Use forks or your hands to shred the meat, discarding any large pieces of fat.

  • Put the pan back onto heat at medium-high and saute your shredded carnitas until they develop crispy edges

  • Garnish with fresh cilantro
