Pesto Sauce

Ingredients

Garlic
-
Coarse salt
-
Basil
-
Raw pine nuts
-
Parmegiano Reggiano
-
Extra virgin olive oil
Instruction​

With a pestle and mortar, mix ingredients in this order:
-
6-7 peeled garlic cloves and coarse salt
-
4-5 oz of fresh basil
-
3 tablespoons of raw pine nuts
-
2 oz of finely shredded Parmegiano Reggiano
-
1/2 cup of EVOO
-
-
Drag pasta onto a serving platter, then mix in the sauce on the plate.

Do not mix pesto in with hot pasta.
